Ingredients: 4 boneless chicken breasts 1 Tbsp olive oil 2 eggs (beaten) flour Italian bread crumbs 28 ounce can petite diced tomatoes 1 Tsp Italian seasoning salt and pepper 3/4 cup fresh shredded parmesean 8 ounces fresh mozerella, sliced Preheat oven to 350. Place eggs, flour and bread crumbs into seperate bowls. Dip chicken in eggs, flour, eggs again and then bread crumbs. Drizzle olive oil into moderately heated pan, then place chicken into pan. Brown on both sides, then place into a casserole dish. Pour tomatoes into skillet. Season with italian seasoning and salt and pepper. Pour over chicken. Top with parmesean. Cover dish and place into oven for 2o - 30 minutes. Remove from oven. Remove cover and top chicken with mozerella cheese. Place back into oven (uncovered) for 10 minutes. Enjoy. Great served with Caesar salad. |
